Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 pound salmon fillet, cut into cubes
1 cup frozen peas
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon paprika
1/4 cup white wine
1/2 cup low-sodium chicken broth
1 teaspoon lemon zest

Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 2 minutes.
Add the salmon cubes and cook until lightly browned, about 3 minutes.
Add the peas, salt, pepper, oregano, thyme, and paprika and cook for 1 minute more.
Add the white wine and chicken broth and bring to a simmer. Reduce the heat to low, cover, and simmer for 10 minutes.
Remove the lid and stir in the lemon zest and parsley. Cook for another 2 minutes, stirring occasionally.
Serve hot over cooked rice.
