Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound salmon fillet, cut into cubes
  • 1 cup frozen peas
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/4 cup white wine
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 2 minutes.
  2. Add the salmon cubes and cook until lightly browned, about 3 minutes.
  3. Add the peas, salt, pepper, oregano, thyme, and paprika and cook for 1 minute more.
  4. Add the white wine and chicken broth and bring to a simmer. Reduce the heat to low, cover, and simmer for 10 minutes.
  5. Remove the lid and stir in the lemon zest and parsley. Cook for another 2 minutes, stirring occasionally.
  6. Serve hot over cooked rice.
