Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1 1/2 cups buttermilk
  • 1/4 cup melted butter
  • 2 tablespoons honey

Directions

  1. Preheat waffle iron to medium-high heat.
  2. In a large bowl, combine flour, cornmeal, baking powder, baking soda, and salt. Mix until combined.
  3. In a medium bowl, whisk together eggs, buttermilk, melted butter, and honey until combined.
  4. Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
  5. Spray waffle iron with non-stick cooking spray. Pour about a cup of batter onto waffle iron and spread evenly. Close iron and cook until golden brown, about 5 minutes.
  6. Repeat with remaining batter.
  7. Serve warm with butter and syrup.
