Ingredients
- 3 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cayenne pepper
- 3 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 cups heavy cream
- 2 cups diced potatoes
- 1 teaspoon dried thyme
- 2 cups smoked salmon, chopped
- Salt and pepper, to taste
Directions
- Melt the butter in a large pot over medium heat. Add the onion, garlic, and cayenne pepper and sauté for 3-4 minutes, until the onion is softened.
- Stir in the flour until it is completely combined. Slowly whisk in the chicken broth and cream, stirring until the mixture is smooth.
- Add the potatoes and thyme and bring the mixture to a boil. Reduce the heat to low and simmer for 15-20 minutes, until the potatoes are tender.
- Add the smoked salmon and simmer for an additional 5 minutes. Season with salt and pepper, to taste.
- Serve the chowder hot, with crusty bread.
