Ingredients

  • 3 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 cups diced potatoes
  • 1 teaspoon dried thyme
  • 2 cups smoked salmon, chopped
  • Salt and pepper, to taste

Directions

  1. Melt the butter in a large pot over medium heat. Add the onion, garlic, and cayenne pepper and sauté for 3-4 minutes, until the onion is softened.
  2. Stir in the flour until it is completely combined. Slowly whisk in the chicken broth and cream, stirring until the mixture is smooth.
  3. Add the potatoes and thyme and bring the mixture to a boil. Reduce the heat to low and simmer for 15-20 minutes, until the potatoes are tender.
  4. Add the smoked salmon and simmer for an additional 5 minutes. Season with salt and pepper, to taste.
  5. Serve the chowder hot, with crusty bread.
