Ingredients
2 medium-sized spaghetti squash
1/2 cup ricotta cheese
1 cup marinara sauce
1/2 cup chopped vegetables (mushrooms, bell peppers, etc.)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Directions
Preheat the oven to 375°F.
Cut the spaghetti squash in half lengthwise and remove the seeds.
Season the squash with salt and pepper and place cut-side down on a baking sheet.
Bake in the preheated oven for 25 minutes, or until the squash is tender.
Remove the squash from the oven and let cool slightly.
In a bowl, mix together the ricotta cheese, marinara sauce, and chopped vegetables.
Fill the squash boats with the ricotta-vegetable mixture.
Top the stuffed squash boats with shredded mozzarella and grated Parmesan cheese.
Return the squash to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
