Ingredients
- 1 medium sized pumpkin
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon ground coriander

- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/2 cup cooked black beans
- 8 small soft tortillas
- 1 avocado, mashed
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup diced tomatoes
- 1/4 cup pickled jalapenos
Directions
- Preheat the oven to 400 degrees F (200 degrees C).
- Cut the pumpkin into cubes and place on a baking sheet.
- In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, coriander, smoked paprika, sea salt, and black pepper.
- Drizzle the spice mixture over the pumpkin and mix until the pumpkin is evenly coated.
- Bake in the preheated oven for 20-25 minutes, or until the pumpkin is tender.
- Heat the tortillas in a pan over medium heat until lightly browned and warm, about 1-2 minutes per side.
- In a small bowl, mash the avocado until it is smooth and creamy.
- Assemble the tacos by placing a scoop of pumpkin on each tortilla, then top with black beans, avocado sauce, cilantro, red onion, feta cheese, tomatoes, and jalapenos.
- Serve the tacos warm.
