Ingredients
- 2 large beets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup water
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 bunch beet greens, washed and chopped
Directions
- Preheat the oven to 375 degrees F.
- Cut the beets into 1-inch cubes.
- Toss the beets with the olive oil and season with salt and pepper.
- Spread the beets in an even layer on a baking sheet and roast for 25 minutes, or until tender.
- Meanwhile, heat the water in a large skillet over medium-high heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the beet greens and cook, stirring often, until wilted, about 5 minutes.
- Add the roasted beets to the skillet and stir to combine.
- Serve warm.
