Roasted Beets and Sauteed Beet Greens

Ingredients

  • 2 large beets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup water
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 bunch beet greens, washed and chopped

Directions

  1. Preheat the oven to 375 degrees F.
  2. Cut the beets into 1-inch cubes.
  3. Toss the beets with the olive oil and season with salt and pepper.
  4. Spread the beets in an even layer on a baking sheet and roast for 25 minutes, or until tender.
  5. Meanwhile, heat the water in a large skillet over medium-high heat.
  6. Add the onion and garlic and cook until softened, about 5 minutes.
  7. Add the beet greens and cook, stirring often, until wilted, about 5 minutes.
  8. Add the roasted beets to the skillet and stir to combine.
  9. Serve warm.
