Ingredients
2 large beets
1 tablespoon olive oil
Salt and pepper to taste
1/2 cup water
1/4 cup chopped onion
2 cloves garlic, minced
1 bunch beet greens, washed and chopped
Directions
Preheat the oven to 375 degrees F.
Cut the beets into 1-inch cubes.
Toss the beets with the olive oil and season with salt and pepper.
Spread the beets in an even layer on a baking sheet and roast for 25 minutes, or until tender.
Meanwhile, heat the water in a large skillet over medium-high heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the beet greens and cook, stirring often, until wilted, about 5 minutes.
