Ingredients
- 1 lb pork tenderloin
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup ricotta cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons olive oil
Directions
- Preheat oven to 375°F.
- In a small bowl, combine the Parmesan, mozzarella, ricotta, parsley, garlic, salt and pepper.
- Cut a pocket in the pork tenderloin and stuff the cheese mixture into it.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the pork tenderloin and sear for 2-3 minutes per side.
- Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 145°F.
- Let the pork rest for 5 minutes before slicing and serving.
