Ingredients

  • 2 cups red cabbage, shredded
  • 1 apple, cored and diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons white balsamic vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil

Directions

  1. In a large bowl, combine the red cabbage, apple, red onion, and parsley. Mix to combine.
  2. In a small bowl, whisk together the vinegar, honey, salt, and pepper. Slowly whisk in the olive oil until it is fully incorporated.
  3. Pour the dressing over the cabbage mixture and toss to coat. Taste and adjust seasonings as needed.
  4. Serve immediately or store in an airtight container for up to 3 days.
