Ingredients
- 2 cups red cabbage, shredded
- 1 apple, cored and diced
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons white balsamic vinegar
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons extra virgin olive oil
Directions
- In a large bowl, combine the red cabbage, apple, red onion, and parsley. Mix to combine.
- In a small bowl, whisk together the vinegar, honey, salt, and pepper. Slowly whisk in the olive oil until it is fully incorporated.
- Pour the dressing over the cabbage mixture and toss to coat. Taste and adjust seasonings as needed.
- Serve immediately or store in an airtight container for up to 3 days.
