Ingredients
- 2 heads of broccoli, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 jalapeño pepper, diced
- 1/4 cup of parsley, chopped
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/2 cup of all-purpose flour
- 1/4 cup of olive oil, plus more for frying
Directions
- In a large bowl, combine the broccoli, onion, garlic, bell pepper, jalapeño pepper, parsley, cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and flour.
- Mix until everything is well combined.
- Add in the olive oil and mix until a thick batter is formed.
- Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom of the skillet.
- Once the oil is hot, add spoonfuls of the batter to the skillet and flatten into patties.
- Fry the fritters for 3-4 minutes on each side until golden-brown and crispy.
- Remove the fritters from the skillet and place on a plate lined with paper towels to drain any excess oil.
- Serve hot with your favorite dipping sauce.
