Ingredients

  • 1 whole chicken (4-5 pounds), giblets removed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • 1/4 cup cracked peppercorns
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Preheat the oven to 375°F.
  2. Rub the chicken with the olive oil, salt, pepper, and garlic powder.
  3. Place the chicken in a roasting pan and roast for 45 minutes to 1 hour, or until the internal temperature reaches 165°F.
  4. Remove the chicken from the oven and let rest for 10 minutes.
