Ingredients
- 1 9-inch unbaked pie crust
- 4 cups rhubarb, cut into 1/2-inch pieces
- 1 cup sugar
- 2 tablespoons cornstarch
- 3 eggs
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together rhubarb, sugar, and cornstarch.
- Pour into the unbaked pie crust.
- In a medium bowl, beat together eggs, salt, butter, cream, and vanilla. Pour over rhubarb mixture.
- Bake in preheated oven for 45 minutes, or until top is golden brown.
