Ingredients

  • 2 tablespoons olive oil
  • 1 large white onion, diced
  • 4 cloves garlic, minced
  • 1 pound Portuguese sausage, sliced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped
  • 1/2 cup heavy cream

Directions

  1. Heat olive oil in a large pot over medium-high heat. Add onion and garlic and cook until softened, about 3 minutes.
  2. Add Portuguese sausage and cook until lightly browned, about 5 minutes.
  3. Add chicken broth, potatoes, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat to low.
  4. Simmer for 15 minutes, or until potatoes are tender.
  5. Add kale and heavy cream and cook for an additional 5 minutes.
  6. Serve hot.
