Ingredients
- 1/2 cup butter, at room temperature
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup key lime juice
- 1/2 cup fresh raspberries, mashed
- 1/4 cup powdered sugar
- 1 teaspoon lime zest
Directions
- Preheat oven to 350°F (177°C).
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla extract and mix until combined.
- In a separate bowl, whisk together flour, baking powder and salt.
- Gradually add dry ingredients to wet ingredients and mix until combined. Set aside.
- In a small bowl, whisk together key lime juice, mashed raspberries, powdered sugar and lime zest.
- Divide dough into 8-10 pieces and roll each piece into a ball. Press each ball into the bottom and sides of a 4-ounce jar.
- Divide Key Lime Raspberry mixture among jars.
- Bake for 15-20 minutes, or until golden brown.
- Allow to cool before serving.
