Key Lime and Raspberry Pies in Jars

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup key lime juice
  • 1/2 cup fresh raspberries, mashed
  • 1/4 cup powdered sugar
  • 1 teaspoon lime zest

Directions

  1. Preheat oven to 350°F (177°C).
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add egg and vanilla extract and mix until combined.
  4. In a separate bowl, whisk together flour, baking powder and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until combined. Set aside.
  6. In a small bowl, whisk together key lime juice, mashed raspberries, powdered sugar and lime zest.
  7. Divide dough into 8-10 pieces and roll each piece into a ball. Press each ball into the bottom and sides of a 4-ounce jar.
  8. Divide Key Lime Raspberry mixture among jars.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Allow to cool before serving.
