Ingredients
- 4 large potatoes, peeled and chopped
- 1/2 cucumber, diced
- 1/2 red onion, diced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped

Directions
- Bring a large pot of salted water to a boil. Add the potatoes and cook for about 15 minutes, or until tender.

- In a large bowl, combine the potatoes, cucumber, onion, parsley, dill, garlic powder, lemon juice, and olive oil. Stir to combine.
