Ingredients
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs, lightly beaten
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup milk
- 3 cups rhubarb, diced
- 2 tablespoons butter, melted
- ½ cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon ground cinnamon
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
- In a large bowl, combine flour, sugar, baking powder, salt and 1 teaspoon cinnamon. Stir in eggs, oil, vanilla and milk until well blended.
- Spread batter into prepared pan. Arrange rhubarb over batter.
- In a small bowl, combine butter, brown sugar, 2 tablespoons flour and 1 tablespoon cinnamon. Sprinkle over rhubarb.
- Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
