Ingredients

  • 1 loaf of French or Italian bread, cut into 1/2-inch slices
  • 1/2 cup of olive oil
  • 1 onion, diced
  • 1 pound mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup ricotta cheese
  • 2 tablespoons freshly grated Parmesan cheese

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Brush each slice of bread with olive oil. Place on a baking sheet and bake for 8 minutes, or until lightly toasted.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 5 minutes, or until softened. Add the mushrooms and garlic and cook for an additional 5 minutes.
  4. Add the wine, parsley, oregano, basil, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Remove from heat and stir in the ricotta cheese and Parmesan cheese.
  6. Spoon the mushroom mixture onto the slices of bread and serve.
