Ingredients
- 1 loaf of French or Italian bread, cut into 1/2-inch slices
- 1/2 cup of olive oil
- 1 onion, diced
- 1 pound mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup dry white wine
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup ricotta cheese
- 2 tablespoons freshly grated Parmesan cheese
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Brush each slice of bread with olive oil. Place on a baking sheet and bake for 8 minutes, or until lightly toasted.
- In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 5 minutes, or until softened. Add the mushrooms and garlic and cook for an additional 5 minutes.
- Add the wine, parsley, oregano, basil, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Remove from heat and stir in the ricotta cheese and Parmesan cheese.
- Spoon the mushroom mixture onto the slices of bread and serve.
