1 loaf of French or Italian bread, cut into 1/2-inch slices
1/2 cup of olive oil
1 onion, diced
1 pound mushrooms, sliced
2 cloves garlic, minced
1/4 cup dry white wine
1 tablespoon fresh parsley, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup ricotta cheese
2 tablespoons freshly grated Parmesan cheese
Directions
Preheat oven to 400 degrees F (200 degrees C).
Brush each slice of bread with olive oil. Place on a baking sheet and bake for 8 minutes, or until lightly toasted.
In a large skillet, heat the olive oil over medium heat. Add the onion and cook for 5 minutes, or until softened. Add the mushrooms and garlic and cook for an additional 5 minutes.
Add the wine, parsley, oregano, basil, salt, and pepper. Cook for 5 minutes, stirring occasionally.
Remove from heat and stir in the ricotta cheese and Parmesan cheese.
Spoon the mushroom mixture onto the slices of bread and serve.
