Ingredients
1 can black beans, drained and rinsed
1/2 cup cooked brown rice
1/2 cup salsa
1/2 cup frozen corn
1/4 cup chopped onion
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
4-5 large flour tortillas
Optional toppings: cilantro, salsa, guacamole, vegan sour cream, jalapenos, etc.
Directions
Preheat oven to 375°F (190°C).
In a medium-sized bowl, combine black beans, brown rice, salsa, corn, onion, garlic, chili powder, cumin, salt, and black pepper. Mix until combined.
Lay out one tortilla and spread a generous amount of the black bean mixture onto it. Roll up the tortilla and place it on a baking sheet.
Repeat with the remaining tortillas until all burritos are assembled.
Bake for 15-20 minutes, until the burritos are golden brown and heated through.
Serve with your favorite toppings and enjoy!
