Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup cooked brown rice
  • 1/2 cup salsa
  • 1/2 cup frozen corn
  • 1/4 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4-5 large flour tortillas
  • Optional toppings: cilantro, salsa, guacamole, vegan sour cream, jalapenos, etc.

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a medium-sized bowl, combine black beans, brown rice, salsa, corn, onion, garlic, chili powder, cumin, salt, and black pepper. Mix until combined.
  3. Lay out one tortilla and spread a generous amount of the black bean mixture onto it. Roll up the tortilla and place it on a baking sheet.
  4. Repeat with the remaining tortillas until all burritos are assembled.
  5. Bake for 15-20 minutes, until the burritos are golden brown and heated through.
  6. Serve with your favorite toppings and enjoy!
