Ingredients
- 1 can black beans, drained and rinsed
- 1/2 cup cooked brown rice
- 1/2 cup salsa
- 1/2 cup frozen corn
- 1/4 cup chopped onion
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4-5 large flour tortillas
- Optional toppings: cilantro, salsa, guacamole, vegan sour cream, jalapenos, etc.
Directions
- Preheat oven to 375°F (190°C).
- In a medium-sized bowl, combine black beans, brown rice, salsa, corn, onion, garlic, chili powder, cumin, salt, and black pepper. Mix until combined.
- Lay out one tortilla and spread a generous amount of the black bean mixture onto it. Roll up the tortilla and place it on a baking sheet.
- Repeat with the remaining tortillas until all burritos are assembled.
- Bake for 15-20 minutes, until the burritos are golden brown and heated through.
- Serve with your favorite toppings and enjoy!
