Ingredients

  • 2 cups diced rhubarb
  • 1/2 cup white sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 cup rolled oats
  • 1/2 cup chopped almonds
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. In a medium bowl, mix rhubarb, white sugar and 1/4 cup flour. Spread mixture in the prepared baking dish.
  3. In a medium bowl, combine melted butter, oats, almonds, 1/2 cup flour, brown sugar, baking powder and salt. Mix until crumbly. Sprinkle over rhubarb mixture.
  4. Bake in preheated oven for 30 minutes. Allow to cool before cutting into bars.
