Ingredients
- 2 pounds tomatoes, halved
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 2 tablespoons olive oil
- 2 tablespoons fresh chopped parsley
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
Directions
- Preheat oven to 400 degrees F.
- Place tomatoes, garlic, and jalapeno on baking sheet. Drizzle with olive oil.
- Roast in preheated oven for 30 minutes, stirring occasionally.
- Remove from oven and let cool.
- Place cooled tomatoes, garlic, jalapeno, parsley, salt, and pepper in a food processor and blend until desired consistency is reached.
- Serve warm or cold.
