Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 (10 oz.) can cream of mushroom soup
- 1 (10 oz.) can cream of chicken soup
- 1 (10 oz.) can Ro-Tel tomatoes
- 1 (8 oz.) package shredded sharp cheddar cheese
- 1 (16.3 oz.) can refrigerated biscuits
- Salt and pepper, to taste
Directions
- Preheat oven to 375°F. Grease a 9x13-inch baking dish.
- In a large skillet, cook ground beef, onion, bell pepper and garlic over medium-high heat until beef is browned, about 5 minutes. Drain off fat.
- Stir in cream of mushroom soup, cream of chicken soup, Ro-Tel tomatoes, 1/2 cup cheese and salt and pepper. Cook until heated through.
- Pour mixture into prepared baking dish. Top with remaining cheese.
- Bake for 25 minutes.
- Remove from oven and arrange biscuits on top in a single layer. Return to oven and bake for an additional 15 minutes, or until biscuits are golden brown and cooked through.
- Let cool for 10 minutes before serving.
