Ingredients
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 1/4 cup rum
- 1 package of ladyfinger cookies
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Directions
- In a large mixing bowl, beat the heavy cream until stiff peaks form.
- In another bowl, mix the mascarpone cheese, sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine the cooled coffee and rum.
- Quickly dip each ladyfinger into the coffee mixture and line the bottom of a 9x9 inch dish.
