Ingredients

  • 1 1/2 cups raw almonds
  • 1/2 cup pitted dates
  • 2 tablespoons melted coconut oil
  • 1/4 teaspoon sea salt
  • 4 cups fresh strawberries, hulled and sliced
  • 1/2 cup pure maple syrup
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons chia seeds

Directions

  1. Add the almonds and dates to a food processor and process until a coarse meal forms.
  2. Add the melted coconut oil and salt and pulse until the mixture is well combined and holds together when pressed.
  3. Press the mixture into an 8-inch pie dish and refrigerate for 30 minutes.
  4. Combine the strawberries, maple syrup, lemon juice, and chia seeds in a medium bowl and stir to combine.
  5. Pour the mixture into the prepared pie crust and spread evenly.
  6. Refrigerate for at least 4 hours or overnight before serving.
