Ingredients
- 1 1/2 cups raw almonds
- 1/2 cup pitted dates
- 2 tablespoons melted coconut oil
- 1/4 teaspoon sea salt
- 4 cups fresh strawberries, hulled and sliced
- 1/2 cup pure maple syrup
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons chia seeds
Directions
- Add the almonds and dates to a food processor and process until a coarse meal forms.
- Add the melted coconut oil and salt and pulse until the mixture is well combined and holds together when pressed.
- Press the mixture into an 8-inch pie dish and refrigerate for 30 minutes.
- Combine the strawberries, maple syrup, lemon juice, and chia seeds in a medium bowl and stir to combine.
- Pour the mixture into the prepared pie crust and spread evenly.
- Refrigerate for at least 4 hours or overnight before serving.
