Ingredients

  • 1 large bunch collard greens, chopped
  • 2 slices bacon, cut into small pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bottle beer
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Directions

  1. In a large pot over medium heat, cook the bacon until crispy.
  2. Add the olive oil, onion, and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the collard greens and stir to combine. Cook for 5 minutes, stirring occasionally.
  4. Add the beer and spices and stir to combine. Bring to a simmer and cook until the collard greens are tender and the beer has cooked off, about 25 minutes.
  5. Season with salt and pepper to taste and serve.
