Ingredients
1/2 cup leftover ratatouille
4 slices of your favorite bread
2 tablespoons butter
4 slices of cheese
Directions
Heat a large skillet over medium heat.
Add the butter to the skillet and melt.
Place two slices of bread in the skillet and top each with a slice of cheese.
Spread the ratatouille over the cheese and then top with the remaining two slices of bread.
Cook until the bottom slice of bread is golden brown and then carefully flip the sandwich over.
Cook until the other side is golden brown and the cheese is melted.
Repeat with the remaining two slices of bread and cheese.
Serve hot and enjoy!
