Graham Cracker Crust III
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup butter, melted
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup milk
2 cups fresh raspberries
1 teaspoon lemon zest
Confectioners’ sugar, for dusting
Directions
Preheat oven to 350°F.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat together melted butter and granulated sugar until light and fluffy.
Add eggs one at a time, beating after each addition. Add vanilla extract, and beat until combined.
Stir in the dry ingredients and milk until just combined.
Fold in the raspberries and lemon zest.
Divide batter into a 9-inch round cake pan, and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
Let cool completely before serving, and dust with confectioners’ sugar before serving.
