Ingredients
- 4 poblano peppers, seeded and cut into strips
- 1/2 cup corn kernels
- 1/4 cup vegetable oil
- 1/2 onion, diced
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/2 cup shredded Mexican cheese blend
Directions
- Preheat oven to 350°F.
- In a large skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add poblano peppers, corn, cumin, salt, and pepper. Cook, stirring occasionally, until peppers are softened, about 5 minutes more.
- Remove from heat and stir in cream. Transfer to a baking dish and top with cheese.
- Bake for 20 minutes, or until cheese is melted and golden brown.
- Serve warm.
