Ingredients
4 poblano peppers, seeded and cut into strips
1/2 cup corn kernels
1/4 cup vegetable oil
1/2 onion, diced
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/2 cup shredded Mexican cheese blend
Directions
Preheat oven to 350°F.
In a large skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add poblano peppers, corn, cumin, salt, and pepper. Cook, stirring occasionally, until peppers are softened, about 5 minutes more.
Remove from heat and stir in cream. Transfer to a baking dish and top with cheese.
Bake for 20 minutes, or until cheese is melted and golden brown.
Serve warm.
