Ingredients

  • 4 poblano peppers, seeded and cut into strips
  • 1/2 cup corn kernels
  • 1/4 cup vegetable oil
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup shredded Mexican cheese blend

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add poblano peppers, corn, cumin, salt, and pepper. Cook, stirring occasionally, until peppers are softened, about 5 minutes more.
  4. Remove from heat and stir in cream. Transfer to a baking dish and top with cheese.
  5. Bake for 20 minutes, or until cheese is melted and golden brown.
  6. Serve warm.
