Ingredients

  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 (14.5 ounce) cans diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the garlic and onion and sauté until the onion is softened and translucent, about 5 minutes.
  3. Add the tomatoes and vegetable broth and bring to a boil.
  4. Reduce heat to low and simmer for 15 minutes.
  5. Add the basil and season with salt and pepper to taste.
  6. Serve hot.
