Ingredients

  • 1 cup uncooked quinoa
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 pound ground turkey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 2 tablespoons chopped fresh parsley

Directions

  1. Cook the quinoa according to package directions.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell pepper and cook for another 3 minutes.
  4. Add the ground turkey and cook until browned, about 5 minutes.
  5. Stir in the dried thyme, sage, oregano, salt, and pepper. Cook for another 2 minutes.
  6. Add the cooked quinoa, cranberries, pecans, and parsley. Stir to combine.
  7. Serve warm.
