3 (8-ounce) packages of cream cheese, at room temperature
1 teaspoon vanilla extract
3 eggs, at room temperature
½ cup semi-sweet chocolate chips
½ cup strawberry jam
¼ cup heavy cream
Directions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
In a small bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan.
In a large bowl, combine the cream cheese, sugar, and vanilla. Beat with an electric mixer until smooth. Add the eggs one at a time, mixing well after each addition.
Pour half of the cream cheese mixture over the crust. Sprinkle with the chocolate chips. Top with the remaining cream cheese mixture.
Bake for 45 minutes, or until the center is almost set. Let cool completely.
In a small saucepan, combine the strawberry jam and heavy cream. Heat over low heat until blended. Pour over the cooled cheesecake.
Refrigerate for at least 2 hours before serving.
