Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 3 jalapeno peppers, seeded and diced
  • 3 poblano peppers, seeded and diced
  • 2 cups vegetable broth
  • 2 cups diced tomatoes, with juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup cooked black beans
  • 1/2 cup cooked pinto beans

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, bell pepper, garlic, and peppers, and cook until the vegetables are softened, about 5 minutes.
  3. Add the vegetable broth, tomatoes, chili powder, cumin, oregano, salt, and pepper, and bring to a boil.
  4. Reduce heat to low and simmer for 15 minutes.
  5. Add the corn, black beans, and pinto beans, and cook for an additional 5 minutes.
  6. Serve warm.
