Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1 teaspoon ground cumin
  • 2 pounds carrots, peeled and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.
  3. Add the cumin and cook for 1 minute more.
  4. Add the carrots and broth, increase the heat to high, and bring to a boil.
  5. Reduce the heat to medium-low and simmer until the carrots are very tender, about 20 minutes.
  6. Puree the soup in batches in a blender or food processor until smooth.
  7. Return the soup to the pot and season with salt and pepper.
  8. Serve the soup hot.
