Quick Rocket Salad

Ingredients

• 2 handfuls of rocket leaves
• 1/2 red onion, finely chopped
• 1/2 cucumber, chopped
• 1/2 red pepper, chopped
• 1/4 cup of crumbled feta cheese
• Juice of 1/2 a lemon
• 1 tablespoon of olive oil
• Salt and pepper, to taste

Directions

1. In a large bowl, combine the rocket leaves, red onion, cucumber, red pepper, and feta cheese.
2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
3. Pour the dressing over the salad and gently toss to combine.
4. Serve immediately.
