Ingredients

  • 2 cups all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup packed light brown sugar
  • 2/3 cup vegetable oil
  • 1 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Directions

  1. Preheat the oven to 350°F. Grease and flour a 9 x 5-inch loaf pan.
  2. In a large bowl, whisk together the flour, cornmeal, baking soda, and salt.
  3. In a separate bowl, mix together the brown sugar, oil, buttermilk, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
