Ingredients
1 cup long grain white rice
1 can black beans, drained and rinsed
1 teaspoon olive oil
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 jalapeno, minced
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon salt
4 strips bacon, cooked and diced
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
Directions
Cook the rice according to package instructions.
In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and jalapeno and cook until softened, about 5 minutes.
Add the cumin, paprika, chili powder, and salt and cook for an additional 2 minutes.
Add the black beans and cook until heated through, about 3 minutes.
Add the cooked rice and bacon and stir to combine.
Remove from heat and stir in the cheese and cilantro.
Serve hot.
