Ingredients

  • 1 cup long grain white rice
  • 1 can black beans, drained and rinsed
  • 1 teaspoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 4 strips bacon, cooked and diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Directions

  1. Cook the rice according to package instructions.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and jalapeno and cook until softened, about 5 minutes.
  3. Add the cumin, paprika, chili powder, and salt and cook for an additional 2 minutes.
  4. Add the black beans and cook until heated through, about 3 minutes.
  5. Add the cooked rice and bacon and stir to combine.
  6. Remove from heat and stir in the cheese and cilantro.
  7. Serve hot.
