Ingredients
- 1 cup long grain white rice
- 1 can black beans, drained and rinsed
- 1 teaspoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 jalapeno, minced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 4 strips bacon, cooked and diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Directions
- Cook the rice according to package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, and jalapeno and cook until softened, about 5 minutes.
- Add the cumin, paprika, chili powder, and salt and cook for an additional 2 minutes.
- Add the black beans and cook until heated through, about 3 minutes.
- Add the cooked rice and bacon and stir to combine.
- Remove from heat and stir in the cheese and cilantro.
- Serve hot.
