Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (14-ounce) can diced tomatoes
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a medium saucepan, bring the quinoa and vegetable broth to a boil over high heat.
  2. Reduce the heat to low and simmer, covered, for 15 minutes.
  3. Remove from the heat and set aside.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  6. Add the cumin, chili powder, and salt and stir to combine.
  7. Add the black beans, diced tomatoes, and cooked quinoa and stir to combine.
  8. Add the cilantro and lime juice and stir to combine.
  9. Cover and cook for 5 minutes, stirring occasionally.
  10. Serve the quinoa and black bean mixture topped with the shredded cheddar cheese.
