Ingredients

  • 1 spaghetti squash
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • 1 cup vegan cheese shreds
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut-side-down on a baking sheet lined with parchment paper.
  4. Bake for 20 minutes, or until the squash is tender.
  5. Remove from the oven and let cool.
  6. Using a fork, scrape the spaghetti squash from the skin and place in a bowl.
  7. Add the olive oil, marinara sauce, vegan cheese, and salt and pepper to the bowl.
  8. Mix to combine and transfer to an oven-safe dish.
  9. Bake for 10 minutes, or until the cheese is melted and bubbly.
  10. Serve warm.
