Ingredients
1 spaghetti squash
1 tablespoon olive oil
1 cup marinara sauce
1 cup vegan cheese shreds
Salt and pepper to taste
Directions
Preheat oven to 400°F.
Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Place the squash cut-side-down on a baking sheet lined with parchment paper.
Bake for 20 minutes, or until the squash is tender.
Remove from the oven and let cool.
Using a fork, scrape the spaghetti squash from the skin and place in a bowl.
