Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 3 cups long-grain white rice
  • 4 cups chicken stock
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound smoked sausage, sliced
  • 2 cups cooked shrimp, peeled and deveined

Directions

  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the onion, bell pepper, garlic, thyme, paprika, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
  3. Pour the rice into a slow cooker, then add the onion mixture, chicken stock, Worcestershire sauce, salt, and pepper. Stir to combine.
  4. Add the sausage and stir to combine.
  5. Cover the slow cooker and cook on low for 6-8 hours, or until the rice is cooked through.
  6. Once the rice is cooked, stir in the cooked shrimp.
  7. Serve the jambalaya hot.
