Ingredients

  • 2 cups almond milk
  • 1/2 cup sugar
  • 2 tablespoons agar agar powder
  • 1/4 teaspoon almond extract
  • Fresh fruit and/or edible flowers (optional)

Directions

  1. In a medium saucepan, combine the almond milk, sugar, and agar agar. Cook over medium heat, stirring frequently, until the mixture comes to a boil.
  2. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  3. Remove from heat and stir in the almond extract.
  4. Pour the mixture into a 9x13 inch baking dish. Refrigerate until set, about 3 hours.
  5. Cut into squares and serve with fresh fruit and/or edible flowers, if desired.

  • Agar agar is a vegan and vegetarian alternative to gelatin.
  • The texture of almond jelly is similar to jello, but without the wiggle.
