Ingredients

  • 1 cup quinoa
  • 2 cloves of garlic, minced
  • 1/2 cup shredded cheese
  • 1/4 cup vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Stir in the quinoa and vegetable broth and bring to a boil.
  4. Reduce the heat to low and simmer, covered, for 15 minutes.
  5. Remove the lid and stir in the shredded cheese.
  6. Cover the pan and cook for an additional 5 minutes.
  7. Remove from heat and season with salt and pepper to taste.
  8. Serve warm.
