- 1 cup quinoa

- 1/2 cup shredded cheese
- 1/4 cup vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- In a medium saucepan, heat the olive oil over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Stir in the quinoa and vegetable broth and bring to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes.
- Remove the lid and stir in the shredded cheese.
- Cover the pan and cook for an additional 5 minutes.
- Remove from heat and season with salt and pepper to taste.
- Serve warm.
