Ingredients

  • 1 ½ cups all-purpose flour

  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons grated lemon zest
  • 1 teaspoon pure vanilla extract
  • ¾ cup buttermilk
  • 2 tablespoons poppy seeds

Directions

  1. Preheat oven to 350°F and grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, beating after each addition. Beat in the lemon juice, zest, and vanilla.
  5. Add the dry ingredients to the wet ingredients in thirds, alternating with the buttermilk, and stirring until just combined. Stir in the poppy seeds.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
