Ingredients

  • 1 tablespoon olive oil

  • 2 (15.5-ounce) cans white beans, drained and rinsed
  • 1 (4-ounce) can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn
  • 1/2 cup heavy cream
  • 1/4 cup freshly chopped cilantro

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until softened and fragrant, about 5 minutes.
  3. Add the diced chicken and cook until browned on all sides, about 5 minutes.
  4. Stir in the white beans, diced green chilies, chicken broth, cumin, oregano, coriander, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  6. Add the frozen corn and continue to simmer for an additional 10 minutes.
  7. Stir in the heavy cream and freshly chopped cilantro.
