Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup milk
  • 1 cup fresh spinach, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, mix together the flour, baking powder, and salt. Stir in the melted butter and milk until just combined.
  3. Fold in the chopped spinach. Pour the mixture into the prepared pan.
  4. Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  5. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
