Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 cup pumpkin puree
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350°F (175°C). Line a cupcake/muffin tin with 12 paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In a large bowl, mix together the pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla extract until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each paper liner about ¾ full with the cupcake batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely before frosting.
