Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F (175°C). Line a cupcake/muffin tin with 12 paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, mix together the pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla extract until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each paper liner about ¾ full with the cupcake batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow cupcakes to cool completely before frosting.
