Ingredients
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1/2 cup strong brewed coffee
1/2 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup quick-cooking oats
1/2 cup chopped walnuts (optional)
Directions
Preheat oven to 375F. Grease a 9×13 inch baking pan.
In a medium bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
Add the coffee, vanilla, and egg, and mix well.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Stir in the oats and walnuts. Spread the batter evenly into the prepared pan.
Bake for 15 to 20 minutes, or until the top is golden brown. Allow to cool before cutting into bars.
