Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon garlic, minced
  • 2 tablespoons tikka masala curry powder
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 3 cups frozen mixed vegetables
  • 1/4 cup plain Greek yogurt
  • 3/4 cup mashed potatoes
  • 1/4 cup shredded cheddar cheese

Directions

  1. Preheat oven to 400°F.
  2. In a large skillet over medium-high heat, brown the ground beef until no pink remains.
  3. Add olive oil to the skillet and heat. Add onions and garlic and cook until soft, about 5 minutes.
  4. Add the tikka masala curry powder and tomato paste and cook for 2 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the frozen vegetables and cook for 5 minutes, or until the sauce has thickened and the vegetables are cooked through.
  7. Stir in the Greek yogurt and remove from heat.
  8. Transfer the mixture to a 9-inch pie plate.
  9. Spread mashed potatoes over the mixture.
  10. Sprinkle the cheese over the potatoes.
  11. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbling.
  12. Allow to cool for 10 minutes before serving.
