Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1/2 cup white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large skillet over medium-high heat, cook the chicken until lightly browned. Remove from heat and set aside.
  2. Add the onion, garlic, and bell peppers to the skillet and cook until softened, about 5 minutes.
  3. Stir in the diced tomatoes, tomato paste, wine, oregano, basil, salt, and pepper. Bring to a boil, reduce heat, and simmer for 10 minutes.
  4. Add the chicken back to the skillet, reduce heat to low, cover, and simmer for 30 minutes, or until the chicken is cooked through.
  5. Stir in the parsley and serve.
