Ingredients

  • 1 teaspoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 2 cups vegetable broth
  • 1 cup uncooked orzo
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese, plus more for serving

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the oregano, thyme, and salt and cook for another minute.
  2. Add the vegetable broth and orzo and bring to a boil. Reduce the heat to low, cover, and simmer for 8-10 minutes, or until the orzo is cooked through.
  3. Stir in the spinach and Parmesan cheese and cook until the spinach is wilted, about 2 minutes. Serve hot, topped with additional Parmesan cheese if desired.
