Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 3/4 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
- 1/2 cup confectioners' sugar
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan.
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
- In a separate bowl, blend together the pumpkin, oil, sugar, eggs, and vanilla.
- Stir the dry ingredients into the wet ingredients until just blended. Spread batter evenly into the prepared pan. Sprinkle with walnuts.
- Bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool in pan for 10 minutes, then turn out onto a wire rack covered with wax paper. Sift confectioners' sugar over the top.
- Roll up cake and wax paper together, starting at the short end. Cool completely before serving.
