Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 3/4 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan.
  2. In a bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a separate bowl, blend together the pumpkin, oil, sugar, eggs, and vanilla.
  4. Stir the dry ingredients into the wet ingredients until just blended. Spread batter evenly into the prepared pan. Sprinkle with walnuts.
  5. Bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool in pan for 10 minutes, then turn out onto a wire rack covered with wax paper. Sift confectioners' sugar over the top.
  7. Roll up cake and wax paper together, starting at the short end. Cool completely before serving.
