Ingredients

  • 1 cup pumpkin puree
  • 1 cup quinoa flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F
  2. In a medium bowl, combine pumpkin puree, quinoa flour, baking powder, cinnamon, nutmeg, and salt. Stir to combine.
  3. In a small bowl, whisk together coconut oil, maple syrup, almond milk, and vanilla extract.
  4. Add wet ingredients to the dry ingredients and stir until combined.
  5. Pour mixture into a greased 9x5 loaf pan and spread evenly.
  6. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool before slicing and serving.
