Ingredients
1 cup pumpkin puree
1 cup quinoa flour
1 teaspoon baking powder
1 teaspoon cinnamon

Directions
Preheat oven to 350°F

In a small bowl, whisk together coconut oil, maple syrup, almond milk, and vanilla extract.
Add wet ingredients to the dry ingredients and stir until combined.
Pour mixture into a greased 9x5 loaf pan and spread evenly.
Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
Let cool before slicing and serving.
