Ingredients

  • 1 can pumpkin puree
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup light brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 2 cups Greek yogurt
  • 1/4 cup honey

Directions

  1. Preheat the oven to 350°F. Grease a 9x13 inch baking dish with butter or cooking spray.
  2. In a medium bowl, mix together the pumpkin puree, sugar, 1 teaspoon of cinnamon, nutmeg, ginger, allspice, and salt. Pour into the prepared baking dish and spread into an even layer.
  3. In a separate bowl, mix together the oats, brown sugar, melted butter, 1/2 teaspoon of cinnamon, nutmeg, ginger, allspice, and salt. Sprinkle the oat mixture over the pumpkin puree and gently press it down.
  4. Bake for 25-30 minutes, or until the crumble is golden brown. Let cool completely.
  5. In a medium bowl, mix together the Greek yogurt and honey. Set aside.
  6. To assemble the parfaits, layer the pumpkin crumble, yogurt, and honey in individual glasses or jars. Serve chilled.
